Today I met Chef Kikuchi, whom I’ve known for about 20 years.
He always greets me with his enchanted smile, and when I leave the restaurant, he waves to me continuously, until he makes sure I am safely gone…
Located near Roppongi Grand Hyatt Hotel , in this little house with a garden, it erradiates the smile of the chef .
In his delicate plates, we find a balance of Japanese and Internacional ingredients .His refined appetizers make a nice contrast with his more powerful dishes. The Chef’s speciality, gibiets recipes , for sure satisfy the apetite of his fans and gibiet lovers.
One other Chef’s specialty, and my all time favorite, is his “ Carrot mousse with consommé geleé”, I wonder if others repeated two or three times like me, before the main dish^ ^
Most of his selection of wines are from Bourgogne, where the chef was trained in his 20s.
Le Bourguignon is a “must visit” when in Tokyo. Look for the little house with garden.
